Sausage and Bacon Baked Macaroni and Cheese

Ingredients

  • 1 pkg sausage
  • 2 cups uncooked macaroni (about 8 ounces)
  • 2 tablespoons butter or margarine
  • 3 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2-1/2 cups milk
  • 1 cup (4 ounces) shredded white or sharp Cheddar cheese
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 6 slices bacon, cooked, crumbled, divided
  • 4 green onions, sliced

Instructions

1.

Preheat oven to 350F. 
Cut sausage into 1/2" cubes. 
Add sausage to a large skillet; cook and stir over medium heat for 3-4 minutes or until sausage is lightly browned. 
Remove sausage from skillet; keep warm.

2.

Cook macaroni according to package directions. 
Drain, rinse and keep warm. 

3.

Melt butter in large saucepan over medium heat. 
Stir in flour, salt and pepper. 
Stir in milk. 
Cook and stir until thickened and bubbly. 
Cook and stir for 1 minute more. 
Stir in cheese, 4 slices of the bacon and green onion stirring until cheese melted. 

4.

Stir in sausage and cooked macaroni. 
Pour mixture into a greased 2-quart baking dish. 
Sprinkle with remaining bacon. 
Bake 20-25 minutes or until edges are bubbling. 

Meat Lovers Skillet Recipe

Ingredients

  • eggs
  • potatoes cubed
  • onion diced
  • parsley
  • salt
  • pepper
  • garlic powder
  • thyme
  • sausage
  • bacon
  • ham
  • shredded cheddar cheese
  • oil for frying

Instructions

1.

Dice up potatoes then fry with spices over medium heat stirring often. 

2.

Fry all the meats and cut up into small pieces set aside.

3.

When potatoes are almost finished add diced onion. 

4.

Mix all the meats with the potatoes in large frying pan. 

5.

Top with shredded cheese.

6.

In another pan fry eggs or scramble.

7.

Serve eggs on top of potatoes and cheese.

Country Brunch Skillet

Ingredients

  • 6 bacon strips
  • 6 cups frozen cubed hash brown potatoes
  • 3/4 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs
  • 1/2 cup shredded cheddar cheese

Instructions

1.

In a large skillet over medium heat, cook bacon until crisp. 
Remove bacon; crumble and set aside. 
Drain, reserving 2 tablespoons of drippings. 
Add the potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. 
Cover and cook for about 15 minutes or until potatoes are browned and tender, stirring occasionally.

2.

Make six wells in the potato mixture; break one egg into each well. 
Cover and cook on low heat for 8-10 minutes or until eggs are completely set. 
Sprinkle with cheese and bacon.

High Temperature Eye-of-Round Roast

Ingredients

  • 1 (3 pound) beef eye of round roast
  • salt and pepper to taste

Instructions

1.

Preheat the oven to 500 degrees F (260 degrees C). 
Season the roast with salt and pepper and place in a roasting pan or baking dish. 
Do not cover or add water.

2.

Place the roast in the preheated oven. 
Reduce the temperature to 475 degrees F (245 degrees C). 
Roast for 21 minutes (seven minutes per pound) then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. 
Do not open the door at all during this time!

3.

Remove the roast from the oven, the internal temperature should have reached at least 145 degrees F (65 degrees C). 
Carve into thin slices to serve.

Simple Tuna Melt

Ingredients

  • 1 (6 ounce) can tuna, drained and flaked
  • 2 tablespoons mayonnaise
  • 1 pinch salt
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 slices whole wheat bread
  • 2 teaspoons chopped dill pickle
  • 1/4 cup shredded sharp Cheddar cheese

Instructions

1.

Preheat the oven to 375 degrees F (190 degrees C). 
Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.

2.

In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. 
Remove bread from the oven, and pile the tuna mixture onto one slice. 
Sprinkle cheese over the other slice of bread.

3.

Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. 
Place the cheese side of the sandwich on top of the tuna side. 
Cut in half and serve immediately.

Gnocchi with Sage-Butter Sauce

Ingredients

  • 2 (12 ounce) packages potato gnocchi
  • 1/4 cup butter
  • 1 clove garlic, minced
  • 1 teaspoon dried sage
  • 1/4 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese

Instructions

1.

Bring a large pot of lightly salted water to a boil over high heat. 
Add the gnocchi pasta, and cook until they float to the surface, 2 to 3 minutes; drain.

2.

Melt the butter in a skillet over medium heat. 
Stir in the garlic, and cook until the garlic has softened and is beginning to turn golden brown, about 4 minutes. 
Stir in the sage and salt for a few seconds, then add the cooked gnocchi. 
Toss gently with 1/4 cup of Parmesan cheese and the pepper. 
Sprinkle with the remaining 2 tablespoons Parmesan cheese to serve.
